“明新食品初創於民國51年，在成功大學及台南一中學區附近成立明新食品行（現長榮路、東寧路口），係屬一販售民生用品之雜貨店，負責人許俊雄先生（現任董事長）鑒於西點麵包將改變國人飲食習慣，以極具前瞻性的眼光前往台北南港烘焙學校（現中華穀類研究所）學習烘焙相關知識及技術，將雜貨店逐漸轉型為西點麵包專賣店，伴隨台南市東區之發展於民國78年正式改組成立「明新食品企業股份有限公司」。”
